Chicken Salad

It's summer and it's hot as hell already. Salads are a staple for me in the summer and Chicken Salad is high on the list of easy things to keep in the cooler.

Love it on bread, salads and straight out of the bowl. It needs something something sweet, something crunchy and something with some punch. I add grapes, toasted almonds and whole grain mustard to get my fix. The base of the salad is equal parts mayo & sour cream - which I find to be much lighter than just mayo alone.

Chicken Salad

INGREDIENTS

  • 4 cups diced cooked chicken
  • 1 rib minced celery
  • 1/2 cup black seedless grapes, sliced in half
  • 1/4 cup toasted slivered almonds
  • 2 scallions, diced fine
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons whole grain mustard
  • 1 1/2 teaspoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

DIRECTIONS

In a medium bowl, combine chicken, celery, grapes, almonds and scallions. In a small bowl, combine sour cream, mayonnaise, mustard, lemon juice, salt, and pepper. Add to chicken mixture, tossing gently to coat. Cover and chill.
